Distillerie Michel Eau de vie de Gentiane Supérieure

This ultra premium Gentiane is made in the Michel Distillery, located in Chapelle des Bois, about 50 kilometres south of Pontarlier, which has specialized in distilling gentiane since 1888. Besides this distillery and a small handful of others, almost all gentiane eau de vie is now made in small batches by local farmers' cooperatives. Production is very limited due to harvest restrictions along with a complicated distilling process, in which the aromas left in the still are so strong and lingering that the distillery reserves an alambic solely for gentiane. The harvest is limited to one month in the fall. After the roots are dug from rocky hillside cow pastures, they are cleaned, shredded and allowed to ferment in large barrels filled with water for 6 weeks. This 'mash' is drained for the lightly alcoholic liquid, which is then added to the alambic and goes through a first distillation to obtain a spirit at 20% alcohol. It is then distilled a second time to create a final 65% distillate, which is then reduced with water to 45% and is left uncolored.
This spirit has a distinct 'under-forest' nose, which clearly reflects the strong aromatic roots from which it is made. The taste is brooding and long and is best appreciated as a digestif. It lends deep, natural tones when added in small amounts to tomato and vegetable soups.
This is a very rare and unique spirit that you'll either love or hate, but you won't be able to say it doesn't leave an impression!
