This 'liqueur de anis' is the sophisticated alternative to pastis. It is made by macerating real aromatic plants in alcohol and then distilling the charge in an antique alambic, rather than just mixing oils to base alcohol. There is no sugar, star anis, liquorice or artificial colour added. The recipe (a modification of the distillery's original absinthe protocol) is the same as that used in 1925 when absinthe was banned and the distillery was forced to find a respectable alternative. Serve diluted 1 to 3 with water; you will never want to drink mass-produced pastis again!

The Michel Eau de Vie de Gentiane is used as its base, mixed with an additional maceration of gentiane and then lightly sugared. Un Sapin, a pine liqueur, is a speciality of Pontarlier and very hard to find - even in France. It is prepared by an alcoholic maceration of 24 different plants including tender young pine buds harvested in Spring. The mix is then distilled and finished with macerated pine buds, sugar and natural colouring. This drink is intended to be sipped chilled, neat at the end of a meal, however it is great over vanilla ice cream! For a taste of the French Jura, try it as a glaze base on a holiday ham.

Distillerie Michel Eau de vie de Gentiane Supérieure

The Michel Distillery is located in Chapelle des Bois, about 50 kilometres south of Pontarlier and has specialized in distilling gentiane since 1888. Besides this distillery and a small handful of others, almost all gentiane eau de vie is now made in small batches by local farmers' cooperatives. Production is very limited due to harvest restrictions along with a complicated distilling process, in which the aromas left in the still are so strong and lingering that the distillery reserves an alambic solely for gentiane. The harvest is limited to one month in the fall. After the roots are dug from rocky hillside cow pastures, they are cleaned, shredded and allowed to ferment in large barrels filled with water for 6 weeks. This 'mash' is drained for the lightly alcoholic liquid, which is then added to the alambic and goes through a first distillation to obtain a spirit at 20% alcohol. It is then distilled a second time to create a final 65% distillate, which is then reduced with water to 45% and is left uncolored.
This spirit has a distinct 'under-forest' nose, which clearly reflects the strong aromatic roots from which it is made. The taste is brooding and long and is best appreciated as a digestif. It lends deep, natural tones when added in small amounts to tomato and vegetable soups.
This is a very rare and unique spirit that you'll either love or hate, but you won't be able to say it doesn't leave an impression!

Génépi is extremely difficult to cultivate; its harvest in the wild is tightly regulated and only limited amounts can be picked per season. This liquor is gently sugared, uncolored, and has a distinctively light, yet aromatic and heady herbal/Alpine profile. To be served chilled, in a small glass, after a meal.
