Vieux Pontarlier (pronounced 'View Pon-tarr-lee-ay') Absinthe Française Supérieure is carefully crafted in small batches using alambic stills that were specifically designed to make absinthe. This historic spirit is distilled using locally grown wormwood (Artemisia absinthium), which is considered the finest in the world, along with green anise seed, Provençal fennel seed and a variety of additional aromatic herbs and spices. Faithful to the original formulations, there is no sweetening added of any kind - its refreshing taste is obtained entirely from the combination of plants and the distiller's skills.

Fine, medium peridot green color. Gradually forming louche, milky with opalescent reflections. Aroma initially of bright anise, developing heady, alpine herbs, with savory, mentholated wormwood notes. Intitial taste is intense and spicily piquant, with round, herbal flavors cradling the wormwood and a long, refreshing, cooling finish of anise and fennel seed.

Perroquet absinthe

Absinthe Perroquet (the parrot) was first conceived in July 2009 and after several trials and adjustments, a distiller's proof of 50 litres was bottled in August 2009. Having perfected the recipe, the absinthe was distilled in September 2009 and put into vats before bottling, and part of the batch was placed in oak casks to mature further. The absinthe was finally released in April 2010 after seven months maturation.

Doubs Mystique "Carte d'or" is a superb ultra-premium absinthe distilled in century old alambics in Pontarlier, in the heart of the Doubs region of eastern France, the historical home of absinthe.
It's a modern absinthe, to please the modern palate, although one that pays homage to the recipes and methods of the past. No other modern absinthe has as extensive a herb bill - the secret of Mystique's richness, smoothness and remarkable complexity of aroma and flavour.

All the herbs - including of course the grande absinthe - that could be sourced from the Pontarlier region were sourced locally. Enormous effort was expended on herb selection, and preparation. The youngest distillations in the final blend are at least 6 months old, the oldest more than a year old, and this balance will be maintained in future production.

Absinthe Roquette - 1797

The Roquette 1797 is a complex, unusual and spicy absinthe, based directly on a late 18th century manuscript recipe. It represents the first serious attempt in the modern era to recreate an absinthe from the very birth of La Fee Verte, when the drink straddled the line between liquor and potion, when it was as much magical and mysterious elixir as fashionable aperitif.

The 1797 contains the classic trinity of anise, fennel and grande wormwood, together with several other herbs, some of which will be found in no other commercially available absinthe. The absinthe is batch distilled in Pontarlier in an antique alambic, and is available in only very limited quantities.

The oldest distillations in the final Roquette bottling are nearly 18 months old, the youngest around 6 months, and this degree of maturation will be preserved in on going production.

Un Emile 68 Verte is a premium absinthe traditionally made to a 19th century recipe by steeping Grand wormwood (Artemisia absinthium), green anise and other plants in alcohol and distilling the macerated charge in an absinthe still. The colour is achieved naturally by soaking plants in the distillate. No star anise is used, which was typical of the traditional Pontarlier absinthe recipes. To best appreciate the complex flavours and louche, it must be properly served by slowly dripping cold water into it, as should all the absinthes from the Emile Pernot distillery.

This is a clear absinthe made in the style of classic uncolored absinthes of the 19th century. It is surprisingly similar to modern Swiss 'La Bleue', a highly sought-after type of absinthe once only produced in clandestine stills found in the Neuchatel region of Switzerland. Un Emile 68 'La Blanche' will truly impress La Bleue aficionados. Using the traditional Un Emile distillate as a base, there is no colouring step and the classic wormwood and green anise flavours are enhanced.

White Fairy is an absinthe blanche developed by Liqueurs de France and produced by the Emile Pernot distillery. This absinthe is released at 60% alcohol, which, we discovered, allows its delicate aromas to be less hindered by a high alcohol punch. As such, it also comes closer than our well-received Un Emile La Blanche 68 to the style and alcohol content found in Swiss 'La Bleue', which is typically between 50 - 60 %, but White Fairy uses no star anise, thus minimizing the 'licorice-like' taste.

We have found it to be the most 'cocktail friendly' absinthe we know of: White Fairy can be used as an interesting substitution in many your favourite recipes, especially mint juleps and mojitos!
